Comforting and reasonably cheap pasta combo all the family love.

 

 

Cook pasta in lightly salted boiling water until just al dente.  While the pasta is cooking, heat sunflower oil in pan and cook onion and mushrooms gently to  soften and brown mushrooms.  Season and reserve.  Drain pasta and return to pan.  Stir in drained tuna chunks, mascarpone cheese,  mushrooms, onions and parsley.  Season and stir to coat everything and heat through.  Spoon into a flameproof dish.  Sprinkle top with cheese and brown under a hot grill till bubbling.

350g/12oz pasta shells
splash sunflower oil

1 onion, peeled and chopped

100g/4oz button mushrooms, quartered

salt and freshly ground black pepper

2x200g cans tuna chunks in oil, drained

3 tbsp mascarpone cheese, beaten soft

1 tbsp fresh parsley, chopped

50g/2oz grated Mature Cheddar cheese

plus a little extra for topping
